Smooth black tea like body carries nippy grapefruit and blackberry acidity through to a long plum candy and malt finish.

Don Sabino Premium Coffee is a family-owned coffee farm in the Central Valley highlands of Costa Rica, where five generations have grown coffee since 1919. Today, producer Steven Vargas leads the farm and micromill, focusing on specialty coffee, innovative processing methods, and sustainable farming practices.

Spanning 93 hectares across the Central and West Valley regions, the farm grows a diverse range of varieties including Catuai, Geisha, SL28, Pacamara, Typica, and Mokka at elevations between 1,350 and 1,820 MASL. Fertile volcanic soils and a unique microclimate contribute to the quality and character of the coffees.

At the Don Sabino Micromill, carefully selected cherries are processed using natural and honey methods, then sorted to ensure consistency and quality. Sustainability remains central to the operation, with regenerative agriculture, forest-friendly farming, and strong community involvement shaping the farm’s approach.

Combining over a century of coffee-growing heritage with innovation and environmental stewardship, Don Sabino produces coffees celebrated for their clarity, complexity, and sense of origin.
